While it’s clear that current mainstream methods of meat production are less-than-sustainable, attempts to replicate the distinctive taste and texture of meat have met with varying degrees of success among end consumers.
Impossible Foods’ soy and Beyond Meat’s pea protein-based burger patties are making inroads with carnivorously inclined but eco-conscious consumers worldwide. But there’s plenty of room for those peddling other, potentially more convincing meat substitutes – such as fast-growing, nutrient-rich, spongy-textured fungi.
